So, as I ponder with shower thoughts... if you were just out in the middle of the lake (St. Clair)... current of 5-7mph... and you want to just drift with some forward control (positioning to the sunset..) would you save any fuel consumption by shutting off one engine? And is that why some boats have different hours on their engines?

You can do that, though my 31 barely goes strait on one engine with the rudder hard over. Pretty sure the current (if you want to call it that) on lk St Clair is less than 1/4kt if I remember right. 

Mine is not great on one engine either. I would either drift with no engine (we used to do this on Lake Ontario) or ideally get a sea anchor.

Always fish on one engine- then switch over to the other engine the next day- balance's the engine hours
Just be sure you secure the other shaft. Freewheeling can damage your trans.

No. As soon as the engine stops, the pump in the trans stops, pressure drops and the clutches release.

Kevin - really the only way to prevent damage is to secure the shaft somehow.
