How does the fuel delivery to the engines from the tanks work?

What I mean is does one tank feed one engine, the other tank the other engine? Can be switch between both tanks, etc...?

It depends on whether it’s an original set up or a previous owner has changed things (for better or worse), whether you still have a crossover, amd whether you have a generator. Easiest way to tell is start at the top of the fuel tank and follow the fuel lines toward the engines. If you can give us an inventory of what you have, it will be easier to determine what you can do in terms of a crossover/tank isolation. 

Most likely if original!  Each tank has a shutoff accessed by a panel in the side wall of the  aft deck above the tanks, additionally there is a shutoff for a crossover at the mid-point of the lines that connect and feed the engines.  The stb tank feeds the genny and that pick-up only goes down about 3/4 so the genny can't starve the stb engine.  This gives the options to balance tanks, starve a tank, empty a tank and starve both engines or empty a tank and then empty the other tank and float and hope.
